Fajitas is owned and operated by Angel Retana. Angel is a long time Gainesville resident and owner of El Carreton Mexican Taqueria, a local favorite know for it’s “Best Tacos & Tortas of the Universe”.

With over 25 years in the restaurant business, Angel has seen how food taste has evolved over time as people travel and broaden their taste palette they also long for fresh foods. With this in mind Angel teamed up with his brother Ali Paris Retana who graduated from one of the top culinary schools in the world, CIA Culinary School of America in New York, to create fresh authentic Mexican food with a twist, by introducing new bold flavors – Fajitas was born.
